Spiced Banana Pancakes

It's National Pancake Day so let's celebrate with delicious Spiced Banana Pancakes topped with Maples Glazed Pecans.

Ingredients:

  • 1 cup flour
  • 1 tablespoon Fresco Apple Pie Spice
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 2 tablespoons applesauce
  • 2 very ripe bananas

Combine wet and dry ingredients in separate bowls.  Stir the wet mixture into the dry without mixing all the lumps out.  Heat a skillet or griddle to medium/high heat and fry pancakes in a little oil until brown. 

For an added topping make maple glazed pecans, or walnuts or whatever kind of nuts you love.  Heat your skillet to a medium heat and and add 1 cup of nuts and 1/4 cup maple syrup.  Cook just until nuts are toasted and syrup is thick and delicious.  This will happen quickly so don't walk away.  It will only take 3-5 minutes.
