Harvest Salad

This past weekend we sampled this festive and delicious Harvest Salad at over 50 Meijer Stores across the midwest.  Everyone enjoyed it and we know you will too.  I will making this for Thanksgiving this Thursday and I recommend that you do the same.



  • 1 & 1/2 cups diced butternut squash (could also use frozen, diced)

  • 2 cups halved brussels sprouts

  • 1 cup pecan halves

  • 2 tablespoons Fresco Spice Blends Penney's Little Italy

  • 1 cup dried cranberries

  • 3 tablespoons olive oil

Combine all ingredients in a bowl and toss to coat with oil and Fresco seasoning.  Pour onto a lined baking sheet and roast at 400 degrees for 30 minutes, being sure to occasionally stir.  Transfer to a serving dish and serve while warm.
