Southwest Chipotle Chili

Ingredients:

  • 2 lbs. ground beef
  • 1 onion-diced
  • 2 cloves of garlic-minced
  • 2 (15 oz) cans kidney beans
  • 2 (15 oz) cans pinto beans
  • 1 bell pepper-diced
  • 2 small cans of green chilis
  • 1 (29 oz) can tomato paste
  • 1 tablespoon ground cumin
  • 2 tablespoons chili powder
  • 2 tablespoons Fresco Southwest Chipotle Blend
  • 2 tablespoons Fresco Mexi Blend
  • 2 teaspoons black pepper
  • 2 teaspoons salt
  • 2 cups water

Begin by browning the beef in a large pot adding the diced onions and then garlic.  (If your beef was not lean you may want to strain it before adding the rest of the ingredients.)  Continue by adding the rest of the ingredients to the pot.  Bring ingredients to a simmer and then cook over low heat for 2-3 hours.  In our opinion the longer you let it simmer the better.

Tip:  If you like a bit more heat and even smokey flavor add a bit more Fresco Southwest Chipotle blend until you reach your ideal flavor.
