Mexican Corn and Beef Skillet Meal

Serves 4

Ingredients:

1lb ground beef

1 red bell pepper, diced

12 oz bag frozen sweet corn

4 tsp Fresco Lime Pepper blend (Mexicali, Fajita, Taco, Mexi Blast, and Southwest Chipotle are also great subs!)

1/4 cup water

1 tbsp cooking oil

Optional Toppings: Cotija cheese, avocado, cilantro, sour cream

 Directions:

1. Brown beef on medium heat until no longer pink in a large skillet. Remove from heat and drain fat.

2. Add 1 tbsp (3 tsp) of the Fresco Lime Pepper (or blend of choice) along with 1/4 cup water. Stir well, cover with lid, and set aside.

3. In a medium sized skillet, sauté corn and red bell pepper in oil over medium heat for 6-7 mins or until veggies begin to char.

4. Add remaining tsp of Fresco Lime Pepper (or other blend of choice) and stir well to coat.

5. Add vegetable mixture to large skillet with beef and stir together.

6. Serve in bowls and top with any or all of the optional toppings (highly recommended!).
