Apple Pie Spice Caramel Popcorn

Ingredients:

1/2 cup popcorn kernels (yellow popcorn kernels work best)

2 Tablespoons vegetable oil

1 cup dark brown sugar

1/2 cup salted butter 

1/4 cup dark corn syrup

2 Tablespoons maple syrup

1 Tablespoon of Fresco Apple Pie Spice Blend

2 teaspoons vanilla extract

1/2 teaspoon sea salt

1/2 teaspoon baking soda

Instructions:

Popping Corn:

1. Add oil and 2-3 kernels to large pot on the stove over medium heat.

2. Heat oil until kernels pop then remove the pieces of popped corn and add the 1/2 cup to pot.

3. Cover pot and move pot back and forth to encourage popping (a Whirly pop works great if you have one!)

4. Once the popping has slowed down to about 3-4 seconds between pops, remove from heat and uncover.

5. Place popcorn in a large bowl or pan.

Making Carmel:

1. In a medium size pot, over medium-low heat, melt butter.

2. Stir in brown sugar, salt, corn syrup, and maple syrup until mixture comes to a light boil.

3. Let boil 3 minutes without stirring, until the caramel has thickened.

4. Remove from heat and stir in vanilla extract, Fresco Apple Pie Spice blend and baking soda. Note that mixture will foam up quite a bit!

5. Pour over popcorn and stir until it is well coated.

6. Spread popcorn onto baking sheets lined with parchment paper.

7. Bake at 225 degrees Fahrenheit for 1 hour, flipping or stirring every 20 minutes.

8. Remove from oven and cool completely.

9. Break apart chunks once popcorn has cooled.

10. Store in an air tight container.
