Sweet Chili Glazed Salmon

This sweet yet slightly spicy glaze recipe was stolen from a good friend of mine.  He found a similar recipe online and we adapted it using Fresco Chili Lime Chipotle.  It can be poured on ANYTHING and make it delicious.  (okay almost anything)  For this post we used it on salmon but we also used it to glaze chicken wings, sweet potatoes, you name it and we have glazed it with this and it was awesome.

Ingredients:

  • 1 Tablespoon Fresco Chili Lime Chipotle
  • 1 cup REAL maple syrup
  • 1/2 cup water
  • 4 Tablespoons white vinegar
  • 2 Tablespoons cornstarch

In a small saucepan combine all ingredients and whisk together over a medium flame.  Continue to cook until the ingredients thicken and bubble creating a thick, sticky glaze.  This may take 12-15 minutes.  Once cooled I pour this glaze into a ball jar and store it in my fridge.

 

 For fish I used a basting brush and coated one side of the salmon, placed it glazed side down in a hot skillet, glazed the second side before flipping and cooked the second side.
