Baked Cheese

There are few things in this world I cannot live without and cheese is one of them.  My good friends made this creamy baked cheese platter when we were visiting their home and I am totally stealing this delicious recipe from them.  I ate so much of this appetizer I had no room for dinner.  I loved this so much I am planning to use it this holiday season.  It is easy to put together, can be made ahead and travels well.

  1. Mix together 16 ounces of your choice of cheese with 1 tablespoon of your Fresco Spice Blend choice.
  2. Transfer to an oven safe dish and bake at 400 for 15 minutes until bubbly and hot.
  3. Mix grape tomatoes with olive oil and season with Fresco Spice Blend of choice.
  4. Pour onto baking sheet and roast them while your cheese bakes.

Get out a pretty platter.  Put your baked cheese in the center and top with roasted tomatoes.  Surround with an assortment of sliced meats and crostini or crackers.  We made this crostini by slicing a baguette, brushing with olive oil, sprinkle with Fresco Garlic Blend and put under the broiler for just a few minutes until crusty.

I love this recipe so much I decided to experiment with other cheeses and varying the spice blend.  There are so many different ways you can make this recipe but every single one is delicious.  I have to say my current favorite may be Goat Cheese, Fresco Mediterranean Blend and sun dried tomatoes.  Give it a try and let us know which combination is your favorite.
