Pumpkin Muffins


  • 1 & 3/4 cups flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 teaspoons Fresco Apple Pie Spice
  • 2 eggs
  • 1/2 cup oil, (prefer coconut)
  • 1 tablespoon whole milk
  • 1 15oz can pumpkin puree

Combine the dry ingredients in a large bowl with a whisk.  In a second bowl combine wet ingredients.  Pour wet ingredients into dry and combine.  

Preheat oven to 375°.  Grease muffin pans, either regular or mini.  Using a scoop to fill each muffin cup almost to the top with batter.  Bake mini muffins for 15-18 minutes, regular muffins for 22-25 minutes.  Sprinkle with powdered sugar because...why not?


These muffins are extremely moist and dense.  You may even think they are not fully done. 

The Apple Pie Spice blend adds a unique combination of spices to the sweet pumpkin flavor that makes them irresistible.  Enjoy!

Tip:  A handled tea infuser makes a perfect little powdered sugar duster.
