- 1 & 3/4 cups flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 teaspoons Fresco Apple Pie Spice
- 2 eggs
- 1/2 cup oil, (prefer coconut)
- 1 tablespoon whole milk
- 1 15oz can pumpkin puree
Combine the dry ingredients in a large bowl with a whisk. In a second bowl combine wet ingredients. Pour wet ingredients into dry and combine.
Preheat oven to 375°. Grease muffin pans, either regular or mini. Using a scoop to fill each muffin cup almost to the top with batter. Bake mini muffins for 15-18 minutes, regular muffins for 22-25 minutes. Sprinkle with powdered sugar because...why not?
These muffins are extremely moist and dense. You may even think they are not fully done.
