Pear Crumble

Today while searching through the refrigerator, I noticed four sad little pears that had been neglected and were starting to turn brown.  Instead of tossing them out I decided to try to salvage them and make a yummy crumble for dessert.


  • 4 (very) ripe pears: cored and chopped, I left the peel on
  • 1 teaspoon freshly grated orange zest
  • juice from one medium orange, about 2 tablespoons
  • 1/4 cup granulated sugar
  • 2 tablespoons flour
  • 1 teaspoon vanilla apple pie spice blend

Topping Ingredients:

  • 1 teaspoon spiced up ginger
  • 3/4 cup flour
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar, lightly packed
  • 1/2 cup old fashioned oatmeal
  • 6 tablespoons cold butter, diced

Mix the pears with all the base ingredients and pour into a medium baking dish.  I used an 8in round but a 9 by 9 square would work just as well.  In a medium mixing bowl combine topping ingredients with electric mixer.  Spoon crumble topping over the pear base and bake in a 350 degree (F) oven.  Bake for 40 minutes until bubbly and perfectly brown on top.  Serve as is, hot out of the oven, or top with a dollop of whipped cream and a pinch of vanilla apple pie spice.
