MIX WELL. SPREAD ON BAGELS, BREADS, MEATS & IN WRAPS.
STEAMED VEGGIES
- WASH & CUT VEGGIES
- PUT IN STEAM BASKET
- SPRINKLE GENEROUSLY WITH PENNEY’S
- FAVORITE BLEND OR ANY OTHER BLEND OF CHOICE
STEAM FOUR MINUTES. SEASON WITH SALT & PEPPER TO TASTE.
ROASTED VEGGIES
- PLACE VEGGIES IN A BOWL & DRIZZLE WITH OLIVE OIL.
- SPRINKLE WITH PENNEY’S ITALIAN SPICE BLEND OR ANOTHER BLEND OF CHOICE & SALT & PEPPER.
- PLACE ON COOKIE SHEET OR IN BAKING DISH.
- STIR VEGGIES HALFWAY THROUGH COOKING TIME.
ROAST FOR 12 – 15 MIN.@ 425 DEGREES DEPENDING ON TYPE OF VEGGIES.
SAUTÉED VEGGIES & RICE
- SAUTÉ, GREEN BELL PEPPERS, HALVED GRAPE TOMATOES & ONION.
TOSS INTO STEAMED RICE OR QUINOA & SPRINKLE PENNEY’S FAVORITE OR ANY OF YOUR FAVORITE BLEND TO TASTE.
SEASONED POTATOES
- 375 DEGREES 30 – 40 MIN.
- 2 TBL. FLOUR
- 2 TBL. PARMESAN
- ½ TBL. GARLIC BLEND
- ½ TBL. ROSEMARY SALT RUB
- 4 UNPEELED POTATOES, CLEANED & CHOPPED INTO
- 1 IN. PIECES RINSED W/ WATER & DRAINED.
- 4 TBL. BUTTER MELTED & POURED ONTO COOKIE SHEET.
MIX THE FIRST 4 INGREDIENTS IN BROWN PAPER SACK, ADD POTATOES & SHAKE UNTIL COVERED.
PLACE IN BAKING DISH. BAKE 15 MIN. TURN POTATOES OVER AND CONTINUE TO BAKE UNTIL SOFT & BROWNED.

SLICED TOMATOES
- LAYER TOMATO’S ON A PLATTER.
SPRINKLE WITH PENNEY’S ITALIAN BLEND OR ANY OTHER BLEND OF CHOICE. DRIZZLE WITH OLIVE OIL & BALSAMIC, LET STAND FOR 5 MIN. UNTIL BLEND IS MOISTENED.
CORN ON THE COB
- AFTER HUSKING THE CORN. BRUSH WITH OLIVE OIL
- SPRINKLE A BLEND ON, (EX: GREEK BLEND, MEXI BLAST, MEXI BLEND, PENNEY’S FAVORITE)
GRILL TURNING UNTIL COOKED THROUGH.
SEASONED RICE
- 1 ¼ CUPS RICE
- 2 TBL. BUTTER
- 2 ½ CUPS CHICKEN BROTH
- 1 ½ TBL. PENNEY’S FAVORITE BLEND OR ANY OTHER BLEND (WHEN USING ANOTHER BLEND START W/ 1 TBL. & GRADUALLY ADD MORE TO TASTE)
MIX ALL INGREDIENTS IN SAUCE PAN UNTIL IT COMES TO A BOIL. COVER WITH LID & SIMMER ON LOW FOR 15- 20 MIN.
BLUE CHEESE SAUCE
- 2 OZ. CRUMBLED BLUE CHEESE
- ½ TSP. PEPPER
- PINCH OF SALT
- ½ TSP. LIME JUICE
- ¼ CUP MAYO
MIX WELL. SPREAD ON TOP OF BLACKENED FISH OR MEAT WHEN IT IS ABOUT FINISHED COOKING. COVER AND LET MELT. SERVE.
THIS CAN ALSO BE SERVED COLD. TRY IT ON A SANDWICH!
SALMON IN PARCHMENT
- 4 SALMON FILLETS
- 2 TBL. PARMESAN CHEESE
- ¼ CUP. MAYONNAISE
- 2 TBL. WHITE WINE PER FILLET
BLENDS TO USE: ELITE EIGHT, GARLIC BLEND, CREOLE, LEMON PEPPER, SOUTHWEST CHIPOTLE, DILL LEMON SALT, RUSTIC GREEK, RUSTIC RUB, SMOKY, SPICY, CITRUS SALT, GARLIC PEPPER & SALT BLEND, ROSEMARY SALT RUB OR PENNEY’S ITALIAN BLEND*
PREHEAT OVEN TO 350 DEGREES MIX MAYONNAISE, PARMESAN, HOT SAUCE & WORCESTERSHIRE TOGETHER. FOLD A 12 X 18 INCH SHEET OF PARCHMENT PAPER IN HALF TO A 12 X 6 PIECE.
OPEN PAPER AND PLACE FISH NEAR CENTER OF FOLD, SPRINKLE BOTH SIDES WITH BLEND, SPREAD MAYONNAISE MIX ON TOP OF FISH. SPRINKLE
AGAIN WITH SPICE BLEND.
BEGIN TO FOLD PAPER TO ENCLOSE FISH, AND MAKE SMALL OVERLAPPING FOLDS TO SEAL EDGES, STARTING ON ONE SIDE, LEAVING THE LAST FOLD OPEN.
PLACE ON BAKING SHEET.
POUR WINE IN OPENING AND FOLD IT CLOSED. REPEAT WITH THE REST OF FILLETS.
BAKE 10 – 12 MIN UNTIL PAPER IS PUFFED AND LIGHTLY BROWN.
*SOUTHWEST & PENNEY’S BLEND ARE A LITTLE STRONGER MAY NOT NEED AS MUCH AS OTHER BLENDS.
BAKED FISH
- 4 FISH FILLETS
- PLACE FISH ON PARCHMENT LINED COOKIE SHEET.
- SPRINKLE A GOOD AMOUNT OF GARLIC BLEND ON
- FISH AND TOP WITH A SMALLER AMOUNT OF ELITE EIGHT.
PLACE PATS OF BUTTER ON TOP OF FISH OR DRIZZLE WITH OLIVE OIL. BAKE @ 350 FOR 12 – 15 MIN. USE FORK TO TEST AND WHEN IT FLAKES FISH IS DONE.
