PENNEY'S LITTLE ITALY CHICKEN PASTA SALAD

 

MARINARA

  • 1  TBL. OLIVE OIL
  • 1  LARGE ONION CHOPPED
  • 1  6OZ. CAN TOMATO PASTE
  • 1  TBL. PENNEY’S ITALIAN BLEND
  • 2  28OZ. CANS CRUSHED TOMATOES
  • 2 ½  CUPS WATER
  • SALT & PEPPER TO TASTE

IN LARGE SAUCE PAN, HEAT OIL OVER MED HEAT. 

ADD THE ONIONS, SAUTÉ 4 MIN.  ADD GARLIC, PENNEY’S ITALIAN BLEND, TOMATO PASTE, SALT & PEPPER COOK, STIRRING FOR 2 MIN.  

ADD CRUSHED TOMATOES & WATER STIRRING UNTIL WELL MIXED. 

BRING TO A SIMMER OVER MED-HIGH HEAT.  SIMMER UNCOVERED FOR 45MIN TO 1 HR.  SERVE. 

CAN BE USED ALSO AS PIZZA SAUCE.  CAN ALSO BE FROZEN FOR LATER USE.

LAYER TOMATOES ON A PLATTER

SPRINKLE WITH PENNEY’S ITALIAN BLEND OR ANY OTHER BLEND OF CHOICE.   DRIZZLE WITH OLIVE OIL & BALSAMIC, LET STAND

FOR 5 MIN. UNTIL BLEND IS MOISTENED.
