Vanilla Apple Pie Spiced Almonds

Shelia made these highly addictive…can’t put them down…best snack ever…vanilla apple pie spiced candied almonds for me yesterday.  They were so yummy.  I use “were” because they are now gone, less than 12 hours after she gave me a box.  I told her I need this recipe.  I am thinking these are going to be perfect to make as teacher gifts this year.  I am going to make a few batches and then give them as gifts with adorable little candy dishes.  That is, if they last long enough to make it out the door.

Ingredients:

Combine water, sugar and vanilla apple pie spice in a medium saucepan and bring to a boil over medium heat.  Once boiling add the almonds to the saucepan.  Continue to stir the combination until the liquid has been absorbed and evaporated leaving a syrup like coating on the almonds.  Pour the almonds onto a baking sheet lined with wax paper and separate with a fork.  Allow the almonds to cool about 15 minutes before you enjoy them.  And don’t say I didn't warn you when you can’t stop.

These make just the perfect gifts. 

Tip:  If you buy raw instead of roasted almonds, no problem.  Roast your almonds by simply spreading them out on a baking sheet and roast them in a 375 degree oven for 10-12 minutes.
