Fresco Fresh Salsa

Chips and salsa is a must have at every super bowl party!  With just six days until the big game we have reinvented the traditional jarred salsa for a much healthier, fresher and better version.

Fresco Fresh Salsa

  • 2 ears of corn on the cob
  • olive oil
  • Fresco Greek Blend
  • 1 can black beans
  • 2 roma tomatoes
  • 12 green onions
  • 1 red bell pepper
  • cilantro
  • 1 jalapeno pepper *(remove seeds for less heat)
  • 2 limes- or 4 tablespoons lime juice

Begin by brushing both ears of corn with olive oil and generously season with Fresco Greek Blend.  Grill corn for 10-12 minutes until tender and allow to cool.  Cut the corn off the cob with a sharp knife and toss in a bowl.  Add to the bowl black beans that have been rinsed and drained.  Cut roma tomatoes in half and remove seeds.  Dice tomatoes similar to size of corn, and toss in the bowl.  Clean green onion by chopping off the roots and slice thinly, add them to the bowl.  Clean and seed one red bell pepper and again dice into small pieces and add to the salsa.  Pull a hand full of cilantro leaves off the bundle a give them a rough chop before tossing in the bowl.  This next step is optional.  *Clean one jalapeno pepper by cutting it in half and removing the seeds.*  Chop the jalapeno into very small pieces and toss into bowl.  Add more or less jalapeno depending on how spicy you like your salsa.  Finish your salsa by juicing two limes into your bowl.  Toss all your ingredients together and serve along side chips.

Don't limit this salsa to just chips:  

It goes great atop a piece of grilled fish or even chicken.  It is delicious served over an omelet and it compliments our pork tacos perfectly.

Feel free to add whatever else you love to this mix.  In the picture above we added a yellow pepper.  Other ideas:

  • avocado
  • mango
  • fresh garlic
  • habanero peppers

~Tip of the day~

If it's twenty degrees below zero and just too cold to grill corn don't be discouraged.  You can simply saute two cups of frozen corn in olive oil and generously season with Fresco Greek Blend.
