- 2 Tbls. Olive Oil
- 2 Tbls. Fresco Sweet Red Bell Pepper and Garlic
- 2 Tbls. Fresco Mexi Blend
- Juice of 2 Limes
- 2 boneless chicken breasts, cut into strips
- 2 bell peppers, cut into strips
- 2 onions, sliced
- 1 jalapano, seeded and sliced
In a small bowl combine oil, spices and lime juice. Place cut chicken, peppers and onions into a baking dish and pour the oil/spice mixture over top. Place sliced jalapenos on top and bake in 400 degree oven for 25-30 minutes, until chicken is cooked through. Stir occasionally as it is baking to ensure everything gets coated in the sauce.
Abby loves to serve this to her family in a warm tortilla topped with salsa and guacamole. We think it would also be delicious served over Mexican rice or even atop a bed of mixed greens for a yummy salad.
